 *Salpicon – mixed seafood vinaigrette with shrimp, mussels, scallops, roasted red pepper
and think sliced red onion

 *Piernas de pollo – roast chicken legs in a spicy tomato and garlic sauce

 *Pinchoc de cordero con romero – lamb brochettes with rosemary and lemon

 *Albondigas – meatballs tossed in saffron and roasted tomato sauce

 *Huevos a la flamenca – Andalusian baked eggs with tomato, ham, asparagus and red peppers

  

Marinades, salads and empanadas:

 *Platatas alinadas – potato salad with tuna, egg and parsley in puff pastry

 *Tortilla Espaρola – Spanish omelets with potatoes and caramelized onions

 *Champinones rellenos – mushrooms stuffed with onion, parsley, chorizo and cheese

 *Cambozola con estragon y ajo – cheese marinated in tarragon and garlic

 *Aceitunas alinadas – marinated green and black olives and red bell pepper in pastry

 *Empanadas de chorizo y aceitunas – chorizo, olives and red bell pepper in pastry
